Jollof Rice is a beloved West African dish known for its vibrant flavors and rich, red color, typically derived from tomatoes and peppers. By incorporating Maggi Soya Chunks, you can add a nutritious, protein-rich twist to this classic dish, making it even more satisfying and delicious.
Ingredients
● 4 cups of rice
● Tomatoes 5 large
● Tatashe 3 large
● Rodo 3pieces
● Tomato paste 2 tbsp
● 2 cooking spoons of veg. oil
● 1 large Onions
● Ginger n garlic 1 tbsp
● Soya chops 100 grams
● Maggi chicken 3 cubes
● 1 signature jollof
● Thyme half tsp
● Curry half tsp
● Bayleaf 3 leaves
Direction
Combine tomatoes, tatashe and scotch bonnet peppers in a blender and blend until smooth. Transfer the mixture to a pot and cook over medium heat until it thickens and most of the liquid evaporates.
In another pot, add some oil till it’s hot, add the chopped onions, ginger and garlic and stir-fry till translucent.
Add the thyme, curry, bayleaf, tomato paste and maggi seasoning, stir-fry then add the steamed pepper mix.
When they’ve properly fried, add maggi signature jollof and some water then allow to boil.
Once boiled, add the rice and cook for about 15 minutes, then add the soya chops and allow to cook together with the rice for an additional 10 minutes
